Carbone Riviera Takes the Bellagio Room Picasso Left
Carbone Riviera’s 240-seat Bellagio seafood house replaced Picasso, packed the fountain terrace, and still missed Michelin’s 2026 Las Vegas list.
Carbone Riviera opened November 7, 2025, on Bellagio’s fountain lake, a 240-seat seafood house in the old Picasso room. Major Food Group and MGM Resorts built it as the first fish restaurant under the Carbone name.
Picasso served its last dinner August 16, 2024, after almost 26 years and two Michelin stars. The new room sells whole fish, a $175 lobster pasta, and a 33-foot Riva named Fortuna. When Michelin came back on August 26, 2026, Carbone Riviera was not among the starred or recommended rooms.
Picasso Closed a Two-Star Room on the Lagoon
Julian Serrano opened Picasso with Bellagio in October 1998 and ran it until he retired. He turned 74 in July 2024. The French-Spanish dining room had two Michelin stars, and Serrano later named that honor, along with his 2002 James Beard Award for Best Chef: Southwest, as the prizes that meant the most to him.
The space sat on the 8.5-acre lake Bellagio calls Lago di Como, with the fountains in the windows and Picasso canvases on the walls. Jackets were requested. Dinner ran long. After the closing was announced, the room booked through the end.
Serrano said he was retiring, and that Picasso would close with him. MGM had a hole in the most watched dining terrace on the Strip, and a partner already inside the company. Major Food Group had been feeding Aria guests at Carbone for years. The lagoon site, Mario Carbone later said, “wanted” a grand seafood restaurant.
FROM PICASSO’S LAST SERVICE TO MICHELIN NIGHT

That calendar is the wager in plain sight. Bellagio gave a two-star terrace to a group that sells spicy rigatoni and captains in bow ties, then waited to see whether the covers would justify it.
A 240-Seat Seafood House Took the Shore
MGM’s opening release called Carbone Riviera the first-ever fish concept from Carbone, created by Mario Carbone, Jeff Zalaznick, and Rich Torrisi with MGM Resorts. Ari Kastrati, MGM’s chief content, hospitality and development officer, said the groups had “created a world-class seafood dining experience that will redefine Las Vegas luxury.”

Martin Brudnizki designed the 240-seat interior with MGM and the group. Guests come through a sea mosaic, then a plaster citrus grove with lemon-shaped lights, into terracotta leather banquettes, mirrored seats, mosaic arches, and Murano glass. Two terraces face the fountains. Paintings attributed to Miró, Picasso, and Renoir stayed on the walls, on loan from MGM’s art collection.
Mario Carbone called it a new chapter with the same DNA. “Here, we’re leaning into seafood at the highest level in a way that’s far beyond anything we’ve done before,” he said, pointing to a raw bar, a whole-fish program with tableside work, and pastas built on expensive product.
Docked on the patio is Fortuna, Bellagio’s custom 33-foot Riva. MGM says it is one of only 18 in the world, from Riva’s limited Anniversario series, and that invited guests can ride it while the fountains run. The official Las Vegas account filmed the boat going into the lake before opening night.

That yacht is the tell. Picasso sold quiet luxury and a chef’s name. Carbone Riviera sells a photograph you cannot take at Aria, plus a captain who still recites the spicy rigatoni speech. In September 2026, diners were still posting the hull against the fountain jets. Casino hosts treat the deck as a toy for invited players. Everyone else fights for a terrace table and watches the show through the glass.
What Dinner Costs on the Fountain Terrace
The kitchen flies in urchin, oysters, langoustines, branzino, and Sicilian prawns, then runs a whole-fish board that changes by weight and boat. Captains present fish grilled over Japanese charcoal, roasted al forno, or baked in salt. Snake River Farms steaks sit on the menu for the guest who did not come for branzino. The posted Carbone Riviera menu still carries the New York hits beside the new seafood plates.
WHOLE FISH ON THE NIGHTLY BOARD
- Sea bream: Offered in varying weights, grilled, roasted, or salt-baked and finished tableside.
- Red snapper: Same three methods, sized for the table rather than a single plate.
- Dover sole: A smaller whole fish, listed at $155 on a March 2026 dinner check.
- Branzino: The salt-baked green-crust version is built for four to six people.
- Turbot: One of the “obscure varieties” the opening notes promised beside the usual names.
A March 2026 dinner write-up by Geoff Carter listed the check before wine. Cocktails such as the Pistachio Colada and the Sunrise Margarita were $22. The pasta that gets photographed, a two-pound lobster fettuccine, was $175. The salt-baked branzino for a group was $325.

Those figures are why the first reply under a glowing post is usually “what is the price.” Public diner scores run warmer on the room and the fountains than on every plate, and some guests walk out talking about salt, chili flakes, and a view they already paid for with the resort fee. Captains still steer first-timers to the Caesar and the vodka rigatoni. Regulars ask for an off-menu chicken parmesan that never had a coastal story to tell. The seafood palace never dropped the original playbook. It just hung it next to a raw bar.
The 2026 Michelin Guide Skipped This Room
Michelin returned to Las Vegas on August 26, 2026, for the first time in 17 years, with a Southwest guide covering Nevada, Arizona, New Mexico, and Utah. Joël Robuchon at MGM Grand took the only two-star award in that guide. L’Atelier de Joël Robuchon, Restaurant Guy Savoy, and é by José Andrés each took one star.
MGM said it earned four stars across three restaurants, more than any other Las Vegas operator, and counted six MGM restaurants honored in 2026 once Bib Gourmand and Selected names were included. China Poblano took a Bib Gourmand. Gymkhana at Aria, open less than nine months, landed on the Selected list. So did Michael Mina at Bellagio, a seafood tasting room in the same hotel as Carbone Riviera.
The published Las Vegas recommended list named 17 restaurants: Anima by Edo, Bouchon, Cote, Estiatorio Milos, Gymkhana, Kabuto, Kame Omakase, Lamaii, Michael Mina, Mott 32, Partage, Pho Ga Bac Bac, Ping Pang Pong, Soulbelly BBQ, Sparrow and Wolf, Stubborn Seed, and Wing Lei. Carbone Riviera is not on that list. Carbone at Aria is not on it either. Neither house took a star or a Bib Gourmand.
Zalaznick did not promise a star. He promised the greatest fish restaurant in the country, which is a covers-and-brand claim. Picasso’s currency in that same room had been stars, a Beard award, and a slow, small service. Michelin’s night made the swap easy to see. A new Indian room at Aria got Selected in a shorter life than Riviera had already lived. The fountain seafood house, with 240 seats and a Riva at the dock, did not.
The Other Carbone Still Books Out at Aria
Major Food Group still runs a separate Carbone dining room at Aria, the midcentury Italian-American house the company says debuted there in 2013. That room is the spicy-rigatoni original: Ken Fulk interiors, veal parm, captains, rainbow cookies. Riviera is the coastal sequel, brighter, more open, and aimed at the lake.
The two restaurants do not replace each other. They stack. A visitor can miss Aria and still wait for Bellagio, or hold both, which is the point of putting a second Carbone on the same Strip campus. MGM’s release said the group now exceeds 50 restaurants, clubs, bars, and hotels across seven countries. Bellagio already knew the brand would book. The open question was whether a fish version would justify taking Picasso’s terrace to do it.
For the casino floor, the answer shows up as hosts steering players to Fortuna and as MGM Rewards points on eligible checks. For the old Picasso regular, the answer is a louder room, a larger seat count, and a menu that would rather sell a $465 steak and a $175 pasta than a four-hour tasting. Le Cirque, Spago, Prime, and Michael Mina still sit on the same property. The two-star French-Spanish temple on the water does not.
How to Get a Table at Carbone Riviera
Bellagio’s live restaurant page lists hours, dress code, and reservations. Dinner runs Monday through Thursday from 5 p.m. to 10 p.m., Friday and Saturday from 5 p.m. to 10:30 p.m., and Sunday from 5 p.m. to 10 p.m. Last reservations are 9:45 p.m. Sunday through Thursday and 10:15 p.m. Friday and Saturday, with walk-ins until close.
HOUSE RULES ON THE BOOKS
- Dress: Upscale attire is required. Casual hats, swimwear, athletic wear, flip-flops, and athletic slides are not allowed, and men must wear closed-toe shoes.
- Booking: Tables go through Bellagio.com or the concierge at (702) 693-6705.
- Terrace: Outdoor seats are the prize, and patio bookings carry a minimum spend.
- Fortuna: The 33-foot Riva is for invited guests, not a standard reservation add-on.
The opening notes also pointed diners to Champagne, white Burgundy, and coastal Italian whites with the crudo, then Tuscany, Piedmont, Burgundy, and Rhône reds with the rest of the meal. None of that makes the table easy. Concierge sites still call it one of the harder rooms in the city. The people who get the deck are the ones who asked early, asked a host, or stood at the stand an hour before their indoor time and waited for a cancellation.
That is the bet paying off in the only way a casino dining room has to. The 240 seats move. The fountains do the marketing. Michelin’s 2026 list went to tasting counters and a two-star French room at MGM Grand. Carbone Riviera kept the lake.
